Crockpot honey chicken and Quinoa

Whew!  My brother is married and I become a godmother - what a weekend!  So much fun and so much celebrating!  It was a wonderful time and everything went smoothly - more on that later this week :)
After such a long and busy weekend, the last thing I want to do (especially in a warm kitchen) is spend hours cooking or have the oven on heating up the house.  Today, I'm all about relaxing (and tending my dancing feet, lol).  Enter a crock-pot dinner.  I love love love the simplicity of crock-pot dinners.  They come together in minutes, cook during the day (but don't heat up the house!), and are ready whenever my husband gets home from work.  Adding in the new super-food of Quinoa is a bonus too :)

PS - this was my first time trying quinoa.  It's pretty plain tasting and has a bit of a nutty flavor, but a different kind of an aftertaste.  I think a smaller potion than pictured here, or with some kind of sauce would be a bit better (but that might defeat the healthy benefits of the quinoa.  Have you cooked with quinoa before?  What's your favorite recipe?  Any suggestions for me?

Honey Chicken with Quinoa
Recipe adapted from: I <3 Naptime

Ingredients:
  • 1 1/2 lbs boneless skinless chicken breast (ok if frozen)
  • 1/4 cup soy sauce
  • 1/2 cup honey
  • 1 TBSP olive oil
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 cup cooked quinoa or rice

Directions:
Put chicken breast in the bottom of the crock-pot.  Combine the soy sauce, honey, olive oil, onion powder, minced garlic, salt, and pepper in a small bowl and stir until well combined.  Pour mixture over chicken.  Cook on low for 4-6 hours.  Chicken should easily fall apart.
Cook quinoa in boiling water or cook rice according to directions.
When chicken is done, serve chicken over quinoa

Crockpot Beef and Barley Soup

One of my husband's all time favorite winter meals is my classic Beef Stew that I make.  We had a HUGE string of cold weather in January (many many many days below zero!)  Local schools were even closed for five days.  It was crazy.  And it had me craving warm hearty dinners that could warm me up from the inside.  Of course, I don't always have a ton of time to spend in the kitchen, so I'm always looking for easy recipes and love taking advantage of my crockpot.
Ok, back on topic, my husband loves my beef stew, and I was looking to mix it up a bit.  I found some different Beef and Barley soup recipes online, and made a few tweaks, and made it more stew like (since my husband likes stews as opposed to soup) and here you have another great warm meal to make in your crock pot!

Beef and Barley Stew in the Crockpot
Ingredients:
  • 1 pound stew meat
  • 4 carrots
  • 4 cloves garlic
  • 5 ribs celery
  • 3 cups of beef broth (3 cups hot water, 3 tsp of beef bullion)
  • 3 additional cups hot water
  • 1 cup barley
Directions:
Chop vegetables and add to crockpot.  Chop/crush/or mince the garlic.  Pour in water and beef broth.  Add in the stew meat. Cook on low for 6-8 hours or high for 4-6 hours. 30 minutes before you want to eat, add in the barley and simmer until the barley and beef are tender.
Serve with fresh bread!

Crockpot Chicken Noodle Soup

Hello Again! 
Last week was the end of the semester at my school, it was a CRAZY busy time!  So glad that the week is over (and that I get today off!  Yay for catching up on chores, (and fingers crossed for some craft time!).  This week will be a busy one for me again, and I won't have much time for cooking.  The so-called polar vortex is supposed to reappaer for the majority of the week.  I am not a fan of high temperatures that start with a - sign.  That's too cold even for me!  
At the end of a long busy (cold!) day, I don't usually feel like cooking  But I do want a warm meal that will be hearty and delicious.  Enter CrockPot Chicken Noodle Soup.  Throw it in the crock pot in the morning, let it simmer all day while you are at work.  Add some noodles when you get home and you have a delicious healthy meal with very little effort on your part, and one that will warm you from the inside out.  Pair with some 30 minute rolls and you have a perfect meal with hardly any work on your part - Win!


Crockpot Chicken Noodle Soup
Ingredients:
  • 2 lbs of chicken 
  • 1 lb carrots
  • 2 cups celery
  • 1/2 medium onion
  • 6 cups of chicken broth (6 cups hot water plus 4 teaspoons chicken bullion)
  • 12 oz egg noodles (3/4 bag)

Directions:
Chop all of the vegetables and place in the crockpot.  Add the chicken on top.  If your chicken is frozen (or partially so) you can put it in whole.  Otherwise, cute into 1 inch chunks.  Pour broth over the top.  Turn crockpot on to low, and cook for 6-8 hours.  
Stir contents of crock pot.  If you placed the chicken in whole, use spoon or knife to break up the chicken into smaller pieces.  By this time, the chicken should be very tender and fall apart easily.
Add the egg noodles over the top and cook for an additional 30-60 minutes.  If needed, add some more water to the crock pot.  You want the noodles to be mostly submerged or they will get crunchy and burned instead of soft and cooked.
Once noodles have cooked, serve warm with a side of bread or rolls.  
Freeze any leftovers.

Pineapple Chicken

Who looks forward to cooking dinner after a long day at work, then a workout?  Not me!  Hence, I LOVE my crockpot and look forward to using it as much as I can.  I stumbled upon this recipe and thought it would be something nice to try... and I loved it.  It could be called Hawaiian chicken because it has that taste to it and there's the pineapple.  Either way, it's delicious.  Even better, it goes great over chow mein noodles - so I was a happy camper the first time I made this.  The soy sauce is not overpowering and the pineapple gives the chicken a great flavor.  By the time its done cooking, the chicken is so moist is just shreds on it own.

Pineapple Chicken
Adapted from Moms with Crockpots
Ingredients:
  • 3-4 Chicken breasts (approx. 2 lbs)
  • 1 can of pineapple in juice (I use chunks, but you can use titbits, rings, or whatever)
  • 1/2 medium onion
  • 2 Tablespoons soy sauce
  • 1/2 cup chicken broth
Directions:
 Place your chicken in the crock pot.  Chop up the onion and place over the chicken.  Add the soy sauce to the chicken broth and pour in the crockpot.  Dump the can of pineapple, juice an all on top of everything.  Cook 4-6 hours on high or 6-8 hours on low.

Serve with rice or chow mein noodles. (I LOVE chow mien noodles)

Savory Beef Stew

Cold winter nights are coming to a end. Or they should be. It's snow right now on this Monday morning.  In fact, we are under a winter weather advisory.  Fun Fact - Its snowed or iced every Monday since Jan 28th.  Where was all that snow during December and early January when I wanted to go skiing???
Before spring arrives I wanted to share one of my favorite go to winter recipes. Nothing is better on a cold night than coming home to a cozy house and smelling a hot dinner cooking. This stew is super simple and I love that it is cooked in the crock pot. I throw the ingredients in in the morning and then when M comes home a hot and filling dinner is waiting. Win! Pair it with a loaf of homemade bread(tutorials coming soon) and you ave a winning combination. :) Enjoy while you wait for spring to arrive.

Ingredients
1 lb stew meat
3 medium potatoes
4 carrots
4 cups beef both (4 teaspoons beef bullion and 4 cups hot water)

Directions
Wash and skin carrots and potatoes. Chop into bite size pieces. Place all ingredients in crock pot. Cook on high for 4 hours or low for 4-6 hours. It's that easy! Pair with crackers and homemade bread. Enjoy!
