Coupon roundup 1

I'm trying something new for a few weeks on my blog.  Near the end of the week, I will post a coupon round up.

Savory Beef Stew

Cold winter nights are coming to a end. Or they should be. It's snow right now on this Monday morning.  In fact, we are under a winter weather advisory.  Fun Fact - Its snowed or iced every Monday since Jan 28th.  Where was all that snow during December and early January when I wanted to go skiing???
Before spring arrives I wanted to share one of my favorite go to winter recipes. Nothing is better on a cold night than coming home to a cozy house and smelling a hot dinner cooking. This stew is super simple and I love that it is cooked in the crock pot. I throw the ingredients in in the morning and then when M comes home a hot and filling dinner is waiting. Win! Pair it with a loaf of homemade bread(tutorials coming soon) and you ave a winning combination. :) Enjoy while you wait for spring to arrive.

Ingredients
1 lb stew meat
3 medium potatoes
4 carrots
4 cups beef both (4 teaspoons beef bullion and 4 cups hot water)

Directions
Wash and skin carrots and potatoes. Chop into bite size pieces. Place all ingredients in crock pot. Cook on high for 4 hours or low for 4-6 hours. It's that easy! Pair with crackers and homemade bread. Enjoy!

Mint M&M Cookies

Usually I am all for the tried and true recipe, the standard one, the normal flavor.  But I've had these mint M&Ms sitting around for awhile.  Surprisingly M hasn't eaten them right up.
So I decided to try a twist on a classic and make mint M&M cookies for M to take to share at work this week.  They would also be great for St. Patty's day because they're Green :)

Mint M&M Cookies

Ingrediants

  • 1 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 teaspoon vanilla
  • 2 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup mint M&Ms
Directions
Beat the sugars and butter together until well mixed.  Add the eggs and vanilla and beat well.  Stir in the flour, baking soda, and salt.  Mix well.  Finally, briefly stir in the M&Ms.  Scoop dough onto cookie sheet and slightly press flat.  
Bake for 9-12 minutes at 375 degrees.

UFO - Unfinished Objects

I have a problem
I love starting new craft project.  BUT... I have issues finishing them :(  Sad face big time.
Pinterest isn't helping the matter at all.  I see all these awesome sewing and other craft related items.  I get all excited.  I make plans to go to the store to get supplies.  I can't wait to get started.  But there's a catch - I either get started and never finish, or I can't find the time to actually do all the projects rolling about in my head that I'm so excited to try.  Not fun.

Here's what I've got going at the moment

Felted messenger bag
Knitted Sweater - just needs the seams finished
2nd sock for my mom (the first one was done ages ago)
Dress

Prayer Shawl
Finished 4/2/13

  • And I usually have a chemo cap and a dishcloth going at all time
  • I think there are probably more, but these are the ones I can think of off the top of my head


Projects that I want to start, but should probably finish those listed above first.
Does anyone else have this problem?  What are you looking forward to working on?  What are your UFOs that you can never seem to finish?

Homeade Granola

So I am the girl that will eat oatmeal raw - not cooked or anything.  But when I discovered granola, I fell in love.  MMMM delicious - and healthy!
Granola is great for a snack.  It's also delicious mixed with yogurt for breakfast.
My granola recipe is pretty basic.  It can be dressed up by adding nuts, sunflower seeds, flax seeds, or dried fruit.  Try  your own concoctions till you find something you like.

Basic Homemade Granola
Ingredients

  • 18 oz (1 package) oatmeal
  • 3 tablespoon flour
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1-2 sticks melted butter
Directions
Dump the oatmeal into a cake pan or jelly roll pan.  Add the flour, brown sugar, and cinnamon.  Mix with a spoon.  Drizzle the melted butter over the oatmeal.  Stir well until all of the oatmeal appears wet.  Bake for 1 hour at 250 degrees, stirring every 15 minutes.


Enjoy plain or with yogurt!

February Update


So... I set some lofty goals at the beginning of the year (I still don't really want to call them resolutions... resolutions too often get broken. So... I set goals. I just happened to set them on Jan. 1st)
How am I doing?
Let's take a look.

1. Be active everyday - at least do something! I'm good about being active during the week and hitting the gym - the weekends, not so much. I'd like to change that.
Take a look - This month was difficult because of being on vacation for a week.  M and I did a lot of walking and exploring, but it was hard to record exactly. 

2. Run 400 miles. I'm worried this might be too much of a stretch for me, considering I don't go much more than 3 miles ever (three times a week), but I can give it a try! I ran about 250 in 2012, so maybe I can be a little more consistent and up my mileage in 2013.
This month I ran 31.3 Miles
This brings my total 2013 mileage to 67.91/400 miles. Making slow but sure progress

3. Run my first 5K since high school cross country.
Nope

4. Finish my prayer shawl for St. Mary's Hospital
Nope, didn't get a chance to work on this one this month.

5. Knit 5 Chemo caps
I have about half of my second one done
1/5 completed

6. Finish one of my other UFO knitting projects
Didn't happen this month

7. Take two masters classes - I am very unmotivated about working towards my master's but I know I should be taking advantage of the tuition reimbursement at Connections Academy
This one may not happen.  I didn't register for the class to start in March.  I'm not motivated to take the class and worried about overbooking myself.  I value the little free time that I do have!

8. Visit one new city or state
:) I visited 4 new places!  I was in Ft. Lauderdale, San Juan Puerto Rico, St. Thomas USVI, and Half Moon Cay. 

9. Be a better wife (I know, it's vague), but somedays I don't feel like I do that well in this area. Maybe I'm still getting the hang of it since I've only been married 2 1/2 months.
I was a good wife and enjoyed my honeymoon with my husband immensly!  We celebrated being married for four months while on our cruise. 

10. Be kinder to myself. M keeps telling me that I'm too hard on myself and need to relax some and be nicer to myself and everything will be ok. We both know that being kind to yourself can be tough, but I want to try to make some improvements in this area.
Some time off during our vacation was much needed and gave me some time to put things into perspective.
