Frosted Slice and Bake Cookies

I'm back from Canada!  I had a lovely trip with my really good friend :)  While I missed my husband, it was nice to go adventuring again and visit somewhere new.  I'll be sharing some pictures and stories with you soon.  
Now that I'm back, of course I'm busy again in the kitchen.  It's been nice around here!  The weather has been more like fall then mid summer, I for one, enjoy the 70s much better than the 90s!  It means I can turn on my oven, and I sure have.
The recipe I'm sharing with you today is super easy :)  I actually made the dough before I went to Canada and then it was already for me to bake up for a sweet treat right when I got home.  Love cookies that can be made ahead like that.  These are also so simple because they don't involve any rolling out of dough.  Great for when you need a cookie in a hurry.  The dough can be made ahead of time and frozen for up to three months.  These were delicious and I plan to stock my freezer with some more dough to have on hand.
Now let's get to it!  

Frosted Slice and Bake Cookies
Recipe adapted from Shugary Sweets
Ingrediants:

  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup unsalted butter (make sure to let it soften first!)
  • 1 egg
  • 1 tsp almond extract
  • 3 cups flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 TBSP milk
Frosting

  • 3 cups powdered sugar
  • 1/3 cup milk
  • 1 tsp desired flavoring (I used vanilla again, but you can use lemon, almond, whatever)
  • Sprinkles!!!

Directions:
Cream the butter and sugar, and vanilla extract together, mixing about 2-3 minutes.  Add egg and almond extract.  Beat in the flour, salt, milk, and baking powder.  Mix well.  Divide the dough in half and roll into a log (the thickness of the log will be how wide your cookies are, Mine were about 2 inches thick).  Wrap in plastic wrap and place in freezer for at least 3 hours, overnight, or up to a few months.
When you are ready to bake your cookies, no need to thaw that dough!  Take straight from the freezer and slice off 1/4 inch thick cookies.  Bake at 350 degrees for 9-11 minutes.  Let cool completely.
Mix up the frosting by whisking together the powdered sugar, extract of choice, and milk until smooth.  I spread the frosting on using the back of a spoon, or you can dip the front of the cookie in the glaze, or use a basting brush - up to you!  Add sprinkle after every few cookies.  Let the frosting set at least 30 minutes.  Store in airtight container.  Enjoy!

Colored Sugar Cookies

Happy Monday!  I can't believe 4th of July is past and the summer continues to fly by.  I had a great 4th of July celebrating with my husband and inviting our friends over for our 3rd annual cookout and badminton tournament.  It was a great day.  I was in charge of desserts for the day, and I made a cake (recipe coming soon) and these simple colored sugar cookies.  I know that the 4th of July is already past, but the awesome thing about this recipe is that they are perfect for any holiday - just change the sugar color and you have a perfect festive treat.  So I wanted to share them with you now.  Enjoy!

Colored Sugar Cookies
Adapted from My Sweet Mission

Ingredients:
  • 1 cup (2 sticks) of room temperature butter 
  • 1 teaspoon salt 
  • 2 eggs
  • 1 teaspoon vanilla extract 
  • 1 teaspoon baking powder 
  • 1 teaspoon baking soda 
  • 1 1/2 cups granulated sugar 
  • 3 1/4 cup flou
  • 3 Tablespoons (1 each) of desired colors of sugar (you can either use the store bought kind, or dye your own sugar using food coloring!)
Directions:
Cream the softened butter, sugar, and salt. Add in the eggs and vanilla and mix well. Batter should be pale yellow and fluffy. Add in one cup of flour, the baking powder, and baking soda. Mix briefly, then add the rest of the flour. Use a cookie scoop to dish out the dough. In small bowls, place 1 tablespoon of desired colored sugar. Roll dough in colored sugar and place on baking pan 2 inches apart (these cookies do spread!). I found it helpful to use the back of a spoon to slightly press down on the cookie.
Bake at 360 degrees for 10-12 minutes.  Let cool for at least 5 minutes on pan before transfering to wire rack to finish cooling.  These cookies can also be made ahead of store and put in the freezer in an airtight container.

Cookie Monster 1 - Cake Batter cookies

Everyone needs a mid-week pick-me-up.  I know some coworkers who have cookie Wednesday, so I thought I would start posting the Cookie Monster series on Wednesdays :)  I may not be in the office to enjoy the cookies with them, but I can share some yummy recipes with you!

The first cookies in the series are a new one to me, they are made with cake batter.  Mmmmm mention cake batter and I'm all over it!  And these ones have a secret ingredient ;)

 
Here's my happy mixer.  This is my favorite place in my new house - my mixing stand finally has a home! (instead of living in the spare closet or on the dining room floor like it did in my apartment)  It's also super great because all of my baking supplies are right above the mixer - very convenient   


Step 1 - Cream butter and sugars together
*Hint, if your butter is cold, put it in the microwave for 8-10 seconds, then flip the stick of butter over.  This helps soften the butter so that it creams better


This is what it looks like creamed!


Now for the secret ingredient - pudding mix!  Add a packet of vanilla instant pudding.  (Just the package of mix, you don't actually make the pudding)


Beat in the pudding and the cake mix, mix well.  


Add in the vanilla and two eggs


Mix well - look at that mixer go!


Carefully add in the rest of the dry ingredients - flour, salt, and baking soda. 


Add some sprinkles if you wish


I used my new dough scoop to scoop cookies onto my cookie sheet, if you don't have a cookie scoop, just use a spoon to drop approx. 1 inch bass of dough.  


Bake at 350 for 10-12 minutes and enjoy!

Cake Batter Pudding Cookies
Ingredients
  • 1 1/2 Sticks (3/4 cup) Butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 3/4 cup funfetti cake mix
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • Sprinkles
Preheat oven to 350 F
In cream together butter and sugars
Add in pudding mix and cake mix and beat until well blended
Add eggs and vanilla, mix well
Slowly add dry ingredients and mix until well Incorporated
Mix in sprinkles if desired
Roll into 1 inch balls and place on greased cookie sheet (or use a silicone baking mat)
Bake at 350 for 10-12 minutes

**Notes**
The original recipe called for 3/4 c brown sugar and 1/4 cup sugar - I evened it out
The original recipe also called for a yellow cake mix, but I preferred to use funfetti because a) I had an open box of funfetti mix, and b) more sprinkles!
