Lemon Pepper Chicken


In my house, this recipe is sometimes referred to as the cursed chicken.  Why you might ask?  I have a good reason for calling it that.  The several times I made it, M was HOURS late coming home for work, so my poor chicken ended up being in the oven at least 3 or 4 times longer than it needed to be.  The first time, he got stuck in traffic in the cities.  The second time I snuck over to his house during the week (he lived about an hour away from me when we were dating) to surprise him with dinner when he was having a bad day and our plans to go to a Twins game had fallen through.  He was supposed to be home at six, he didn't get home until 8:45.  I was not very happy.  So this became the cursed chicken.  Now whenever I make it, I always make sure it's on a day when he is not work and when he is home and in my sight during the entire time it's cooking.  :)

Please don't be scared to try this recipe   It's super easy and great for a week night home cooked meal.  Pair with some freezer corn and Puck Biscuits and you have a home cooked meal in under an hour!


Ingredients:
1 package of chicken breasts (2-3 breasts approx 1 1/2 lbs)
1 Tablespoon butter
Lemon Pepper Seasoning

Directions
Line an 8x8 backing pan with tin foil.  Melt the butter and using a basting brush, brush the butter onto both sides of the chicken breasts.  Sprinkle with lemon pepper seasoning.  Bake at 350 for 30-40 minutes (halfway through, turn the breasts over and sprinkle the other side with seasoning).  Make sure the chicken is cooked through - check with a meat thermometer, it should be at 180 degrees.

Crafting for a Cause: Pillowcase Dresses

Another Project 14 project completed - whoot!

Last month, while looking through a linky party (sorry, can't remember which one!).  I stumbled on this post on Ladybird Lane and learned that each month (or every few months) she features a different crafting for a cause.  This spring, she is teaming up with her friend Amy over at One Artsy Mama featuring Project Yesu and making pillowcase dresses to send to young girls in Uganda. I thought it sounded like an awesome idea and I knew I wanted to participate.

I followed this tutorial on Sew Like My Mom to make my pillowcase dress.  I plan to make more this weekend, but I wanted to get this post out as soon as possible so that you can have time to make some pillowcase dresses of your own if you are so inclined.


These dresses are super simple to make - less than an hour for the first one, and the second one takes even less time!  I used some fabric that I had on hand, so no need to even run to the store.  Sew Like My Mom even has a size chart for baby dresses through age 8.  All sizes are needed.
All you do is choose your size and cut your fabric.  Fold and press the long sides and sew them up.  Make a casing at the top for your ribbon (about 1 inch, depending on the size of your ribbon).  Sew right sides together, but leave about a six inches free at the top of the dress for arm holes.  Hem the whole dress.  Finally, thread your ribbon through.  Anchor the ribbon by sewing across the ribbon in the middle of the casing to hold it in place.  Check out Sew Like My Mom's tutorial if you have questions (until I have time to get more pictures up!)

Simple One Hour Bread - Really!

So, as I mentioned a few weeks ago in my post on Oatmeal Honey Wheat Buttermilk Bread, that I really enjoy making bread, but the one downfall to it is that working with yeast is often time consuming.  With my job being so busy this year, it's difficult to make fresh bread when it takes about three hours or more from start to finish and needs to be punched down once or twice and then baked for an hour.  That doesn't always work with my schedule during the week, but I still love the smell of fresh bread and being able to serve bread hot out of the oven with dinner.  (M also is a big fan of hot bread too :).
In comes the one hour bread recipe - seriously - mixing, rising, and baking - it takes a hour.  Get it started and then put together the rest of your dinner and everything will be ready at the same time.  Perfect!


Simple One Hour Bread
Adapted from: La Fugi Momma
Ingredients:

  • 5 1/4 cups flour
  • 3 Tablespoons sugar
  • 1 1/2 teaspoon salt
  • 1 1/2 Tablespoon instant yeast
  • 1 1/2 Tablespoon oil
  • 2 cups hot water

Directions:

Mix the dry ingredients  then add the oil and water.  Mix for one more minute until well incorporated.  Dough should be sticky, if it is too dry, add more water.  Then knead for five minutes (I use my stand mixer and dough hook).  This step is important!  Also, do not add any more flour once you start kneading.  Dough should have a smooth consistency.
Grease two 9x5 loaf pans.  Divide the dough between the two pans.  Cover with a dish towel and let rise in a warm place for 25 minutes.
My house is always too cool for bread to rise (unless its summer), so I place the pans on the radiator  to rise
Heat oven to 350 degrees.  *Optional* Before baking, grease a knife and make three slashes in the top of each loaf.  Each slash should be a quarter inch deep and at a 30 degree angle.  Bake loaves for 25 minutes, or until golden brown.

Umbilical Cord Baby Hat

I seem to be getting to the point in life where a lot of my friends are starting to have babies.  Last spring, almost exactly a year ago, the first of my group of friends had her darling baby girl, shortly after my wedding another friend from college also had a girl, and two weeks ago our neighbors welcomed a baby boy.  Of course, with all of these babies comes baby showers and I was at a bit of a loss of what to get, especially since I knew I couldn't go to my college friends shower.

I wanted to make these babies something special, and it started with Miss P last spring.  I came across this pattern for an Umbilical Cord baby hat in Debbie Stroller's book Stitch 'N Bitch: The Knitter's Handbook
 (Side note, this 100% my ideas and not a sponsored post at all, but that book, along with Stitch 'n Bitch Nation are my two favorite knitting books. They are great for beginners and the patterns are easy to follow.  Some of them are kind of funky (rocker wristbands anyone?) but lots of them are cute and easy and I love how she explains the basics of knitting - tons of great illustrations)

Anyways, so I first made the baby hat for Miss P last April.  She's turning one on Saturday, and her mom told me how she was outgrowing the original hat I had made her.  So as part of her 1st birthday present, I decided to make her a bigger hat!


It was pretty easy to do.  I added 8 stitches to the cast on to make it slightly bigger around, and then I knit an extra half inch before starting to decrease.  I saw Miss P last night and it fits perfectly!  I was pretty happy (and so glad that mom had liked the hat enough to want a second one!)  This is now my go to gift for baby showers.  I love it because it is a cute and fun (and practical) homemade gift.  It knits up fast and mom's love it because it's washable.  A win all around!

Pineapple Chicken

Who looks forward to cooking dinner after a long day at work, then a workout?  Not me!  Hence, I LOVE my crockpot and look forward to using it as much as I can.  I stumbled upon this recipe and thought it would be something nice to try... and I loved it.  It could be called Hawaiian chicken because it has that taste to it and there's the pineapple.  Either way, it's delicious.  Even better, it goes great over chow mein noodles - so I was a happy camper the first time I made this.  The soy sauce is not overpowering and the pineapple gives the chicken a great flavor.  By the time its done cooking, the chicken is so moist is just shreds on it own.

Pineapple Chicken
Adapted from Moms with Crockpots
Ingredients:
  • 3-4 Chicken breasts (approx. 2 lbs)
  • 1 can of pineapple in juice (I use chunks, but you can use titbits, rings, or whatever)
  • 1/2 medium onion
  • 2 Tablespoons soy sauce
  • 1/2 cup chicken broth
Directions:
 Place your chicken in the crock pot.  Chop up the onion and place over the chicken.  Add the soy sauce to the chicken broth and pour in the crockpot.  Dump the can of pineapple, juice an all on top of everything.  Cook 4-6 hours on high or 6-8 hours on low.

Serve with rice or chow mein noodles. (I LOVE chow mien noodles)

Ultimate Blog Party - Peanut Life Adventures

Prayer Shawl

Yippe!!!! One of my UFOs is FINALLY done!  Look at this thing - it's huge!

It's a prayer shawl that I'm donating to St. Mary's hospital.  I'm one of the handicraft volunteers that works at the hospital making things for the patients and their families.  This is the first prayer shawl I've done.  I've made a few chemo caps as well, but this was a MUCH bigger project. I've been working on it since before I even got engaged.  lol.  That tells you how long of a project it was to complete.




It's not hard to do, just was time consuming, as it used 3 skiens of yarn (Lion Brand Homespun Yarn).  Depending on how tight you knit you can use between an 11 and 17 size needle.  I used wooden size 11s (Clover Takumi Bamboo Premium 13/14 inch Single Point Knitting Needles)
The pattern is a simple basketweave combination of knits and pearls.
Cast on 63 stitches.
Then Knit 3, pearl 3.  That's it.  Knit 3, Pearl 3, repeat until you've used all three skeins.

I'm feeling pretty proud of myself for finally getting this done - and being able to check something off of my to-do list!
