Soft and Sweet Sugar Cookie Bars

I'm back from the nature woods and camping!  Whew!  My husband dearly loves to camp and loves going to Whitewater each year.  I had never been camping until I met him.  Always an adventure!  This year was a little rough, with some heavy rains last night and the bugs were pretty bad.  I don't like bugs.  But I still enjoyed our time away and hiking and just talking with him. 
But now I'm back to life and M will be returning to work again in the morning.  Booo :(   June is still his busy month, so he has one more week of very busy long days, not home in time for dinner kind of long days.  Oh well.  That's why we try to sneak away camping on one of his comp days during June - just so we can see each other.
Anyways, right before we left, I was experimenting in the kitchen tried out these sugar cookie bars.  Love them!  As I've mentioned before, I love a good sugar cookie.  The softer and fatter the better.  And these really fit the bill.  They are great if you have a time crunch because they all go in one pan and then you are done - no waiting around for cookie sheets to go in and out of the oven.  Win in my book!

Soft and Sweet Sugar Cookies
Recipe adapted from I Heart Naptime
Ingrediants:
  • 1    teaspoon    baking powder 
  • 1    teaspoon    vanilla extract 
  • 1    egg white
  • 1    egg 
  • 2 1/2    cups    flour 
  • 1/2    teaspoon    salt 
  • 3/4    cup    sugar 
  • 1/4    cup    powdered sugar 
  • 1/2    cup    butter ( softened ) 
  • 1/4    cup    sour cream
Frosting
  • 3    cups    powdered sugar 
  • 3    tablespoon    heavy cream 
  • 1/2  cup    butter ( softened ) 
  • 1/2    teaspoon    vanilla extract 
Directions:
Using a stand mixer, combine the butter and sugars and mix until fluffy (about 3 min). Add in the vanilla, egg, egg white, and sour cream and mix until combined. Slowly add in the dry ingredients and mix well.
Place mixture in a greased 8x11 glass pan. Bake for 20 minutes at 350 degrees or until lightly browned. Be careful not to over bake!



Let the cookie bar cool completely.  Then mix up the frosting (and color if desired).  Spread frosting and cut into bars.  I found my 8x11 pan made about 20 bars.  If you use a 9x13 glass pan instead, your cookie bar will be a little thinner, but you can obviously cut more of them.


Look at this thick and white and chewy cookie bar - soooo good!  Enjoy!
