Soft Almond Sugar Cookies


The last few weeks I've been bringing you a lot of (fairly) healthy recipes, but I've needed some comfort food the last few weeks while dealing with a family emergency.  I had some of these at home that I had made before life got crazy and they were a nice treat to have when I got home late at night.
I do love a soft sugar cookie.  Pretty much my favorite.  No brown edges, just a nice soft and chewy cookie.  And boy, do these deliver!  I really love these cookies, they are sooo soft and nice and chewy.  They also have the perfect hint of almond flavor.

Soft Almond Sugar Cookies
Recipe Adapted from:

Ingrediants
  • 1 1/2 cups sugar
  • 2/3 cup unsalted butter
  • 2/3 cup shortening/Crisco
  • 2 eggs
  • 2 teaspoons almond extract
  • 3 3/4 cup flour
  • 1 Tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Directions



Cream the sugar, butter, and shortening.  Add in the eggs and almond extract.  Finally, mix in the four, cornstarch, baking powder, and salt.
Chill the dough for at least 30 minutes.
Using a cookie scoup, scoop appoximately 2 teaspoons of dough into a ball and roll in raw (or colored) sugar.  Place on greased baking sheet.
Press cookies slightly flat.

Bake cookies for 7 minutes at 350 degrees.  Let cool on baking sheet for 2-3 minutes before moving to cooling rack (cookies will look under cooked, but they will firm up as they cool).

  5. My 14 year old LIKES the smell of Amaretto (discovered this when I ordered an italian margarita and it came in a seperate shot) I think I will try these as a surprise....sound like she will LOVE them!

  23. Cool completely. Store in tightly covered container. Roll again in powdered sugar just before serving. Makes about 36 cookies.
